Traditionally, Key Lime Pie is made with sweetened condensed milk, because back in the old days there were no cattle in the Florida Keys and the only milk that was available came in cans.
Well, our problem is the opposite. There is no brand of sweetened condensed or evaporated milk that is cholov Yisrael (kosher dairy), and anyway we prefer to bake pies that do not contain any dairy ingredients, in order to serve after eating a meat meal.
So here is a recipe for Key Lime Pie without dairy ingredients.
Ingredients:
•2 8 ounce containers Tofutti Better than Cream Cheese (non-dairy cream cheese)
•1 cup sugar
•1 tsp vanilla
•1/4 cup Nellie & Joe's® key lime juice
•2 Tbsp cornstarch
•1 pre-made graham cracker pie crust
•1 8 oz. container of non-dairy whipping cream (Rich Whip)
Preparation:
Pre-heat the oven to 350 degrees.
In a blender or mixer, combine the first 6 ingredients and beat until smooth and creamy. Pour into pie crust.
Bake for 45 minutes to 1 hr. Allow to cool. Chill for at least 4 hours before serving to allow pie to set.
Beat the Rich Whip until fluffy, and spread over the pie. Decorate with lime slices, if desired.
