Sweet Potato/Butternut Squash Pie
3 cups mashed cooked sweet potato & butternut squash
1/2 c. brown sugar
1/4 c. sugar
1/2 c. margarine
1/2 c. non-dairy creamer
1/2 c. flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
1 9-inch prepared pie shell, unbaked.
Preheat oven to 350.
Peel and slice about 2 sweet potatoes, and 1 c. of butternut squash chunks, cook until soft.
Mash sweet potato and squash in a mixing bowl. Add sugar, margarine, creamer, flour, eggs, cinnamon, nutmeg and vanilla. Beat at medium speed about 2 minutes.
Pour squash/potato mixture into pie shell and bake for about an hour.
