* 1 recipe pastry for a 9 inch single crust pie
* 1 (15 ounce) can pumpkin puree
* 1 cup packed brown sugar
* 1/2 teaspoon salt
* 2 teaspoons ground cinnamon
* 1 teaspoon ground ginger
* 2 tablespoons molasses
* 3 eggs, beaten
* 1 cup nondairy creamer (such as Coffee RichTM)
1. Mix together pumpkin, brown sugar, salt, cinnamon, ginger, and molasses. Blend in eggs and non-dairy creamer. Pour filling into pie shell.
2. Bake at 425 degrees F (220 degrees C) for 40 minutes, or until set.
